Intuition People’s Pale Ale Risotto

Ingredients

12 oz Intuition People’s Pale Ale

4 ½ cups chicken stock

1 Tbs grapeseed oil

1 cup chopped red onion

½ cup chopped red bell pepper

1 tsp minced garlic

1 tbs butter

1 pound Arborio rice

¼ cup heavy cream

¼ cup each grated Parmesan, Romano, and Asiago cheese

1 tsp lemon juice

1 cup coarsely chopped Roma tomatoes, seeded

2 Tbs chopped chives

Directions

In hot oil, sauté onions & bell pepper until just soft. Add salt & pepper to taste. Add stock, Intuition People’s Pale Ale & garlic. Bring to boil, then reduce & simmer for 6 minutes. Add rice; simmer 18 minutes, stirring constantly. Add remaining ingredients, simmer for 2 minutes. Serve immediately.
