Samuel Adams Cherry Wheat Potato Salad
Ingredients
2.5 lbs red potatoes, washed and cut into bite size pieces
1 Tbs grapeseed Oil
2 Tbs butter
½ cup onion, finely chopped
½ cup shallots, finely chopped
1 tsp minced garlic
½ cup dried cherries, finely chopped
2 tsp fresh thyme, finely chopped
1 tsp salt
½ tsp pepper
½ cup Samuel Adams Cherry Wheat
3 Tbs habanero balsamic vinegar
½ cup fresh cherries, coarsely chopped
½ cup toasted almonds, coarsely chopped
Directions
Place potatoes in large pan of water. Add a Tbs of salt to water. Boil potatoes until just tender (no mushy potatoes!). Drain completely. Meanwhile, heat oil and butter in sauté pan over medium heat. Add onion and shallots until translucent. Add garlic; continue cooking for 2 minutes. Turn heat to medium low. Add dried cherries, thyme, salt and pepper. Cook for 2 more minutes. Add Samuel Adams Cherry Wheat & habanero balsamic vinegar. Allow to reduce to almost half. In large bowl, toss mixture with potatoes (while everything is still warm). Allow to cool 15 minutes, then cover & chill for a couple hours or over night. Enjoy!
